Diversity Enriched Curriculum graphic.

Overview:

The University of Minnesota identifies “understanding diverse philosophies and cultures within and across societies” as a desired student learning outcome for all undergraduates. The CFANS Diversity Enriched Curriculum (DEC) offers departments a framework for intentionally developing and fostering undergraduate courses that incorporate the essential tools for achieving such an outcome: intercultural competence, including cultural awareness, non-judgmental examination, and critical thinking skills. 

A goal of DEC is to develop curriculum that is progressive or “spiral” such that key concepts are presented repeatedly throughout the curriculum and with deepening layers of complexity, or in different applications.  CFANS currently underway with developing such spiral curriculum in three majors: Environmental Sciences, Policy and Management; Forest and Natural Resource Management; and Nutrition (Food Science and Nutrition).
